2 apples, finely chopped, no need to peel
40g raisins
40g sultanas
40g currants
Half of an orange (zest and juice)
Half of a lemon (zest and juice)
1⁄2 teaspoon mixed spice
1⁄2 teaspoon cinnamon
2 1⁄2 tablespoon brandy
1 pinch grated nutmeg
25g coconut oil
Directions
- 1.
Finely chop the apples so that they are the same size as the raisins. Place all the ingredients into a large saucepan and cook on a medium heat with the lid on for about 15 minutes until the apples are soft and cooked through. Stir every now and again to prevent sticking. Towards the end of the cooking time life the lid to allow any extra liquid to be evaporated.
- 2.
To assemble, cut out 48 pastry circles to fill each individual hole. Fill each pastry case with a small teaspoon of mincemeat.
- 3.
Cut stars from the remaining pastry and gently place on top of each pie, brush the tops with egg wash or milk and bake for approximately 7-8 minutes until lightly golden.
- 4.
Cool in the tin on a wire rack for 5 minutes and then ease the tarts out onto the rack to cool further.
