Truvia breakfast biscuits

Too busy for breakfast? This is never a good idea. However these breakfast biscuits are. Pop these in your bag for your on-the-go breakfast.

Ingredients

  • 2 Medium bananas

  • 90g Oats

  • 30g Pumpkin seeds

  • 20 Desiccated coconut

  • 40g Mixed dried fruit

  • 7g Truvia

  • 40g Maple syrup

  • 1 tbsp. Chia seeds

  • 12 tsp cinnamon

Directions

  • 1.

    Preheat oven at 160oC and Line a baking try with baking paper.

  • 2.

    Mash bananas up until smooth

  • 3.

    Combine the remainder of the ingredients in a large bowl, add in the mashed banana. Mix well ensuring the banana is evenly distributed.

  • 4.

    Take 16th of the ingredients and shape into a round cookie shape, approx 7cm wide and 1.5cm high. Repeat for all of the mixture. Bake for 20 minutes until golden brown

  • 5.

    Remove from oven and transfer to a rack to cool. Keep in an airtight container for 48 hours.
