For the muffins
2 large bananas mashed
1⁄4 tsp melted (unsalted) butter
Pinch of salt
1⁄2 tsp baking powder
1 egg
2 tsp of Truvia
2 tsp of caster sugar
125g plain flour
For the crumb topping
2 tbsp of plain flour
2 tbsp porridge oats
130g Walnuts
3 tbsp butter (unsalted) softened
2 tsp Truvia
2 tsp of caster sugar
Directions
- 1.
Preheat oven to 180 C
- 2.
To make the crumb topping, add all of the crumb topping ingredients into a bowl. Stir until crumb consistency and set aside.
- 3.
To make the muffins, mash the bananas and place in a separate bowl, along with salt, baking powder, baking soda, egg, Truvia, sugar and flour. Mix until all combined and thickened. (Use a hand mixer for an even quicker mix!)
- 4.
Spoon muffin mix into muffin cases and sprinkle the crumb topping on all muffins.
- 5.
Bake for 25 mins until golden.
