The Jelly
The juice of 2 oranges (plus the zest of 1
The juice of 1 lemon
400g strawberries
Small bunch of mint
4 tsp truvia
5 leaves gelatin
175ml Pimms
To serve
100ml whipping cream
100g Greek yogurt
4 slices of cucumber to garnish
Directions
- 1.
Add 300g strawberries, the orange zest, 5 sprigs of mint and truvia to a pan and gently heat until soft
- 2.
Add the citrus juices and blitz in a food processor
- 3.
Lay a piece of muslin in a sieve and strain the juices out using the back of a wooden spoon.
- 4.
Add the juices back to the pan and heat up
- 5.
Soak the gelatin in a little cold water until soft, squeeze out any excess liquid and whisk into the hot strawberry juices.
- 6.
Pour into a jug and add the Pimm's, top up with water until you have 600 ml.
- 7.
Slice the remaining strawberries. Using 4 glasses bowls or tumblers add a ring of sliced strawberries pressed against the bottom of each glass/bowl pour in a little of the jelly and place in the fridge to set.
- 8.
After 1 hr the jelly should be set enough to top up with the remaining jelly.
- 9.
To serve whisk the whipping cream until firm, fold in the Greek yogurt and blob a little on top of each jelly. Decorate with a slice of strawberry, cucumber and sprig of mint.
