55g unsalted butter, softened
40g Truvía Calorie-Free Sweetener
110g vegetable oil
2 eggs
110g natural yoghurt
Zest and juice of 1 small orange
235g plain flour
2 tsp baking powder
100g blueberries
Directions
- 1.
Grease and baseline a 12 hole square or round non-stick muffin tray.
- 2.
Cream the butter and Truvia together with a hand-held mixer, once thoroughly mixed add in the oil, eggs and yogurt. Beat well until smooth.
- 3.
In a separate bowl add the flour, baking powder and orange zest.
- 4.
Add the dry mixture to the wet mixture and beat well until smooth. Add the orange juice and blueberries and mix thoroughly once more. Spoon the batter into the prepared cake tins.
- 5.
Bake for 20 minutes or until a toothpick inserted into the centre comes out clean.
- 6.
Leave in the tin for 5 minutes before removing. Leave to cool completely on a wire rack.
