Ginger Fruit and Nut Cookies

The great thing about this recipe is you can decorate the cookies with pretty much anything you fancy and they are guaranteed to taste great. For the cookies
2 tbsp. coconut oil
3 tbsp. almond butter
1⁄2 cup unsweetened almond milk
1 tsp. ground cinnamon
1 tsp. ground ginger
pinch of ground nutmeg or mixed spice
zest of 1 orange
3 tbsp. Truvia
1 tsp. vanilla Extract
2 cups rolled oats
2 tbsp. almond or coconut flour
To decorate
Chopped Walnuts
Dried cranberries
Dried cherries
Crystallised ginger
Chopped dried apricots
Directions
- 1.
Have 1-2 baking trays ready lined with greaseproof paper
- 2.
Place the coconut oil, almond butter and milk in a small pan and heat gently, allowing the nut butter to melt. Whisk in the spices and orange zest to infuse
- 3.
Remove from the heat and leave to stand for 5 minutes, then whisk in the Truvia, vanilla
- 4.
Stir in the oats and coconut or almond flour to combine, you should have a flapjack dough mixture
- 5.
Using a small cookie cutter or mini cake tin, take a heaped teaspoon of the mixture and spread in the mold on the lined baking tray. Smooth out then repeat to use all the mixture up - should make about 12 cookies
- 6.
Now decorate with dried fruits and nuts, gently pushing them into each cookie
- 7.
Freeze for about 30 minutes then keep in the fridge
