Coconut Whip with Fresh Berries
TruviaWe've created our Coconut Whip for those times when you want a sweet moment but you want a lighter alternative to a heavy dessert. We recommend serving with Fresh Berries or our Truvia berry coulis. This is also great on top of dessert bases for a lighter alternative to cheesecake!

Coconut Whip
2 Small tins of coconut cream, ideally pre-chilled.
2 Tsp Truvia
1 Tsp Nielsen Massey Vanilla Paste
1⁄2 lemon zest
For the berry mix
200g of Fresh berries, washed and prepared for serving (our favourite is a mix of blueberries, strawberries and raspberries- Trust us, it's delicious).
2 Tsp Truvia
Directions
- 1.
Drain the water from the tins of coconut cream and spoon the remaining cream into a bowl. Allow to chill for 15 mins min. Add the Truvia and vanilla paste to the coconut cream before whipping the mix with an electric hand mixer until soft peaks start to form, this may take between 2-5 minutes.
- 2.
Gently fold in the lemon zest and divide into 2 serving bowls.
- 3.
For the berry mix sprinkle the prepared fresh berries with the Truvia and mix well. Allow to stand for 5-10 minutes so the fruits start to soften and release a little juice.
- 4.
Spoon the fruit over the coconut whip and serve immediately.
