Pastry for single-crust 9-inch pie
1 large lemon, grated zest and juice
1 orange, grated zest and juice
1 lime, grated zest and juice
160ml fat free evaporated skim milk
A pinch of salt
2 tsp cornflour
2 egg yolks
2 whole eggs
36g Truvía® Calorie-Free Sweetener
1 tsp of citrus zest medley

Directions
- 1.
Preheat oven to 204° C.
- 2.
Bake pie crust according to directions. Approximately 10-12 minutes. Cool on rack.
- 3.
Reduce oven temperature to 160°C.
- 4.
Grate zest of lemon, orange and lime and combine.
- 5.
Squeeze the juice of each of the fruits. Combine the juices and measure 2⁄3 cup.
- 6.
In a small bowl, combine milk, salt and corn flour; stir.
- 7.
In a medium bowl, whisk together the egg yolks, whole eggs, Truvía® Calorie-Free Sweetener and 1 tsp of zest medley.
- 8.
Add milk mixture; whisk to blend.
- 9.
Add juice mixture; whisk to blend.
- 10.
Pour into cooled crust.
- 11.
Bake for 25 minutes just until set. Cool on wire rack.
- 12.
Refrigerate before serving. Top with light whipped topping if desired.
